These are absolutely amazing and go with pretty much any meal. They go great on top of a salad or other mixed veges. Do make sure you cook the kumara before hand (Boiling is usually fine) until they are nice and soft. They are far quicker to cook than a regular potato, so it shouldn’t take longer than 10 – 15 minutes.

p.s. for those not living in New Zealand, Kumara = regular sweet potato.
