Yes the cooking time required is a bit long, but the end result is definitely worth it! The recipe calls for gorgonzola cheese, but you can substitute in your favourite vegan cheese alternative of course! As the footnote suggests, you can roast the squash the night before cutting out the majority of time it takes to make.
