Instead of frying off the tofu straight from the packet, this stir fry dries it out, and then bakes it at a decent heat to make give it a much more “meat-like” texture. It ends up much crispier on the outside, but still soft on the inside and able to soak up all the flavors of the stir fry. Even once it’s baked in the oven, it’s advisable to leave it out while you prep the veggies just to dry it out that much more. Probably sounds a bit silly, why would you want “dry” anything, but it really works!
