Spinach is just one of those veges that you keep in the fridge and put with almost anything. I always have a huge amount of kale, spinach and silverbeet (swiss chard) lying about ready to throw into any recipe. This particular recipe makes it it’s main feature, which is great for Vitamin A and C.
