OK, I admit it. Carrots with oranges doesn’t exactly sound like a winning option, but it actually works. Especially with the ginger added, it makes it alot more of a spring soup rather than a hearty winter one. The recipe makes a huge amount (serves 8!) so adjust accordingly if you don’t need that much. Although it’s always great to cook it all in one batch and freeze it for lunches/easy dinners later in the week.
