There is no better meal heading into winter than soup. And this butternut squash recipe fills the belly on a cold night. I usually add a couple more greens (Think silverbeet/swiss chard) to get my iron intake up at the same time, but this soup is so simple and easy that you can add almost anything and it would taste amazing.
