The problem with many soups going vegan, is that you often lose the “creaminess” of the soup. Without the ability to add in cream (Which really.. Is unhealthy no matter your diet choices), things can turn a bit watery. This recipe gets around that by adding in soaked cashews and blending until smooth. Cashews add a very smooth creamy consistency that make you wonder why you’ve never used them previously.
